Hello dear friends,here in Croatia,on the coast of Adriatic sea, we cant imagine Holidays without cod-fish!We prepare cod-fish on few different way but now i will write how to prepare "in bianco".
First you have to find nice cod-fish!
Try in Italian or Croatian delicateness!
You have to buy dried cod-fish!!
About 800 gr. will be nice for 6 doses!
You have to buy it few days before because you first put dried fish in water for4-5 days!
After that fish became soft and you have twice more of it!
How to prepare and all you need find here:
Integrates:
- 1 medium size bakalar (dried cod-fish)
- 1 lb of potatoes, peeled and thickly sliced
- 4 cloves of garlic, chopped
- 1 tablespoon of chopped Italian parsley
- 1 cup of virgin Olive Oil
- Salt and freshly ground white pepper and milk /if you like/
Directions
- Soak the bakalar in cold water for 72 hours, changing the water every 12 hours.
- Peel the skin off and flake the fish.
- Remove the bones and the brown gut section.
- Cook the bakalar in water in a large pot for 2-3 hours over a medium heat.
- Cook potatoes separately.
- Drain both well.
- Place both into a large bowl and add parsley, salt, pepper, oil and garlic and mix until the dish is almost a paste containing lumps of potato .
- I like to mix with just a little milk or you can cooked cod-fish in milk!
